Sponge Cake


¾cup corn flour

¼cup plain flour

1teaspoon cream tartare

1/2teaspoon bi carb

¾cup castor sugar

4 eggs room temp

2T boiling milk with 1T melted butter

¼teaspoon salt



Beat whites, gradually add salt and sugar til thick

Add yolk, added sifted dry ingredients

Add milk and butter

Mix well

Place in a  LARGE greased tin, or two cake tins

Mod oven, 180-200 10-15 mins or until cooked

Serve with whipped Cream and Strawberries

White Chocolate Cheesecake





Ingredients
Base
185g plain chocolate biscuits
100g butter melted

Filling
3 teaspoons gelatine
2 tablespoons water
2x250g cream cheese
400g condensed milk
300mL cream
150g white chocolate

Crush Biscuits and add melted butter. Press firmly into a spring form tin. Refridgerate
Melt chocolate
Sprinkle gelatine over water in a heat proof jug. Place in a saucepan of water over low heat and stir until dissolved
Beat cream cheese and condensed milk together until smooth
Beat Cream until soft peaks form
Stir warm gelatin mix into cream cheese mix
Fold in cream and melted chocolate
Pour over base and let set for 4-5 hrs

serve with whipped cream and berries

More Food Sharing

Choc Chip Biscuits



makes 30

Ingredients

125g butter
1/2 cup brown sugar
1/3 cup castor Sugar
1 teaspoon Vanilla Essence
1 egg
1 1/2 cups self raising Flour
3/4 cups choc chips

Cream butter and sugar until light and fluffy
Mix in the vanilla and egg.
Stir in flour until combined.
Add Choc Chips
Place teaspoons of mixture on greased baking tray and bake in a moderate oven (160 degrees) for 10-15 minutes


These taste good just a little bit under cooked if you love that chewy cookie taste or leave just a little longer, just becareful not to burn if you love them for dunking into your coffee ;)

Choc Rough Muffins















makes 12

Ingredients

125g Butter
125g Sugar
2 eggs
250g Self Raising Flour
30g cocoa
155g Choc Chips
45g Coconut
185ml Milk

Cream butter and sugar, add eggs one at a time beating well between each addition
Sift Self Raising Flour and Cocoa and add alternatively with the milk, making sure you don't over mix (otherwise you will end up with tough muffins)
Gently stir through coconut and choc chips
Place into well greased muffin tin and bake 20-30mins (or until cooked) at 180degrees

Enjoy either hot or cold....

Also I've used chopped up Cherry Ripe bars in place of the choc chips too, just make sure you don't add as much coconut ;)
