White Chocolate Cheesecake





Ingredients
Base
185g plain chocolate biscuits
100g butter melted

Filling
3 teaspoons gelatine
2 tablespoons water
2x250g cream cheese
400g condensed milk
300mL cream
150g white chocolate

Crush Biscuits and add melted butter. Press firmly into a spring form tin. Refridgerate
Melt chocolate
Sprinkle gelatine over water in a heat proof jug. Place in a saucepan of water over low heat and stir until dissolved
Beat cream cheese and condensed milk together until smooth
Beat Cream until soft peaks form
Stir warm gelatin mix into cream cheese mix
Fold in cream and melted chocolate
Pour over base and let set for 4-5 hrs

serve with whipped cream and berries

Wow, that cheesecake looks amazing! I can already imagine how good this one is, lol! I'll be trying this for sure, maybe next week so I can make some sort of a dry run before I make it on my husband's 34th birthday. He loves cheesecake (well, all of us do actually!) and I would like to do this for his party. Thanks for sharing this recipe! :)

Yummm. That looks almost too good. But I just pigged out on choc covered nuts and sultanas, so I shouldn't be looking at anything that decadent for quite a few days ;)
