mmmm gotta love muffins

The kids and I have been baking heaps, they love helping out and Luke just loves the product.
Thought I'd share our awesome Bacon and Cheese Muffin Recipe with you all
4 rashes of bacon, chopped
1 egg, lightly beaten
1 cup milk
60ml vegetable oil
2 tablespoons of chopped fresh parsley
250g self-raising flour
90g grated tasty cheese
1 onion finely diced
1. place bacon in a frying pan and cook over a medium heat, stirring until crisp. Remove bacon from pan and drain on absorbant kitchen paper
2. Place egg, milk, oil and parsley in a bowl and mix to combine. Combine flour, cheese and onion. Add flour mixture and bacon to egg mixture and mix until combined.
3. Spoon mixture into 12 greased 125ml muffin tins and bake for 20-25 minutes in a 180C (350F) oven or until muffins are cooked. Serve warm or cold.
